I have told you before how much i love the versatility of cauliflower. this recipe is the start of that love story. the day that i discovered how similar mashed. 1 bulb roasted garlic; 1 head cauliflower; 2 cups low-sodium vegetable stock (you may need an extra cup if you have a large head of cauliflower) coarse salt, to taste. This whole30 vegetable side dish is delicious and low carb! no one will know that you're serving mashed cauliflower instead of mashed potatoes!.

Reply. i made this a few days ago and this is what i did differently: only 1/4 cup butter, and i used dried chives as i didn’t have green onions..
